My Apricot Factory

This week someone gave us a whole box and a half of apricots.  I was planning on taking them to my mom, helping her can them, and then snagging some bottled apricots for Spencer and me.

Unfortunately, someone already gave Mom a lot of apricots this week. 

As a result, our kitchen has been re-comissioned for an apricot processing factory:



In a 300-square foot apartment, there's not a lot of space to spread out apricots.  
I'm running out of cookie sheets fast!

So, the great question remaining is what to do with all these apricots?  I don't have my own canning equipment and Mom is already using hers.  I've been calling and emailing family for ideas, as well as browing all of Allrecipes.com's recipes that involve apricots.

Here are a few of my favorite ideas so far:

1. Apricot Freezer Jam




Any other suggestions?

Buy a water bath canner ($20), a box of jars ($8-10), a cheap canning instructions book from Walmart, and go to town on your own. You might be surprised how easy it is to do waterbath canning. p.s. You can buy everything you need at Walmart. You can even get tongs and magnets for the lids, etc if you want to.

Good idea Krista! I didn't have any idea it was that cheap to buy a water bath canner. If you don't go the canning route, I would opt for dehydrating or fruit leather. That would use them up the fastest anyway, and would be what I would most want to eat later on. Good problem to have, lucky duck!

Whoa, Kim--I can't stay on your page too long, because I start drooling on my computer. Apricots, chocolates....mmmmmmm, is it dinner time?

And my vote is definitely cobbler or freezer jam. MMmmmmmmm!!! Way to go you cooking beastie you :)

I love that Hez called you a cooking beastie. And I will eat some apricot cobbler if you make some. :) how noble of me
